(Buttermilk Cornbread) Morning Recipe to Brightens Your Day

Buttermilk Cornbread
A super simple, delicious go-to cornbread. This recipe comes from my Mom's Aunt Ruby and was in an old family cookbook. It's one of those that easily stands the test of time.

Cornbread is great on it's own with a little butter and honey or as an ingredient in other dishes like Southern Cornbread Stuffing, Mexican Cornbread and Creole Cornbread Stuffing.
Ingredients:
  • 1 cup yellow or white cornmeal
  • 1/2 cup all purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 3/4 teaspoon Salt
  • 1 cup low fat buttermilk
  • 1 egg
  • 2 Tablespoons olive oil
  • 1 teaspoon sugar
  • Directions:
    1. Preheat oven to 425 degrees
    2. In a large mixing bowl, combine all ingredients and mix to a batter consistency
    3. Spray a 9 x 13 inch baking dish or cast iron skillet with pan spray
    4. Pour batter in baking dish and bake for 10 - 20 minutes until top is browned and bread is baked through
